This time, Southwind Projects proposed to the collective to look into the human consumption of insects, how they are regularly eaten around the world, sometimes as a staple of the local diet, sometimes as a delicacy of regional cuisine. In any case, eating insects carries a big stigma among western culture as something uncivilized when not repugnant. On the other hand, given the different crisis of ecological sustainability that we face, consuming insects is starting to be seen as a solution both for the health of the planet and for the individuals who consume them. A protein free of fats, which production doesn't generate a negative impact on the environment, is becoming the new "food of the future", praised equally by chefs, entrepreneurs and social and political activists.
